Thai Style Fish Cakes with Spicy Chili Tuna

These spicy, tasty Asian treats make a terrific appetizer your guests won’t be able to resist.

Ingredients:
- 1 can of SAFCOL® Gourmet Tuna with Spicy Chili Chipotle.
- 4 medium size potatoes
- 1/2 cup bread crumbs
- 3/4 cup plain flower
- 1 small white onion (finely chopped)
- 2 tbsp fresh coriander leaves (chopped)
- 1 small red chili (finely chopped)
- 1 egg (beaten)
- salt and pepper to taste
- 1/4 cup vegetable oil

Instructions:
Peel potatoes and cut into quarters. Bring a medium sized saucepan of water to boil and add the potatoes. Cook until tender, mash, and allow to cool. Place tuna (including the juices), mashed potato, 1/2 cup bread crumbs, flour and onion in a bowl and mix well. Add coriander, chili, egg and seasoning and mix well. Shape into patties and coat with remaining bread crumbs and set aside. Heat enough oil in a frying pan over moderate heat to shallow fry patties on both sides until golden brown. Try not to overfill the pan. Allow pan to cool and place contents on a paper towel for oil to be drained. Serve warm and top with chili sauce, if desired, and finish with a squeeze of lime.
