Add tuna and cook for 30 seconds. Deglaze with white wine. Add basil and 1oz of heavy cream. Season with salt and pepper to taste.
Preheat oven to 350°F.
Cut grape tomatoes in half. Brush cooked manicotti with olive oil and stuff with spoonful of filling and halves of grape tomatoes. Repeat this until each manicotto is fully packed. Place manicotti onto baking tray and bake for 7 minutes.
For sauce:
Melt butter on a hot pan, add other half of garlic, and cook for 10 seconds. Add the rest of the heavy cream and half of the grated cheese. When the sauce achieves a thick consistency, season with salt.
Plating:
Place two manicotti on a hot plate, pour prepared sauce on top and add marinara in the middle. Garnish with grape tomato, cheese, and basil. |
