Studies have shown eggplants can lower cholesterol. We like it because they can be used to create this unique dish the whole family can enjoy.
Ingredients:
- 1 pouch SAFCOL® Gourmet on the Go Tomato and Basil Tuna in Spring Water
- 2-3 Japanese eggplants
- 2 tbsp olive oil
- dash of salt and pepper
- diced tomato
Instructions:
Cut eggplant in half lengthwise, season with salt and pepper and olive oil.
Marinate for 5 to 10 minutes. Put the eggplant on the grill for 2 minutes per side.
Remove eggplant from grill, top with diced tomato and SAFCOL® Gourmet on the Go Oven Dried Tomato and Basil Tuna, and serve. |
