Grilled Eggplant with Oven Dried Tomato and Basil Tuna

Studies have shown eggplants can lower cholesterol. We like it because they can be used to create this unique dish the whole family can enjoy.

Ingredients:
- 1 pouch SAFCOL® Gourmet on the Go Tomato and Basil Tuna in Spring Water
- 2-3 Japanese eggplants
- 2 tbsp olive oil
- dash of salt and pepper
- diced tomato

Instructions:

Cut eggplant in half lengthwise, season with salt and pepper and olive oil.
Marinate for 5 to 10 minutes. Put the eggplant on the grill for 2 minutes per side.
Remove eggplant from grill, top with diced tomato and SAFCOL® Gourmet on the Go Oven Dried Tomato and Basil Tuna, and serve.
