SAFCOL® Gourmet Recipe for Lemon Pepper Tuna with Melon Gazpacho
Lemon and Dill Salmon Tostadas

This light and hearty dish made with crunchy corn tostadas takes about five minutes to prepare.

Ingredients:

- 2 SAFCOL® Gourmet on the Go Salmon with Lemon & Dill
- 6 corn tostadas
- 3 tomatoes (small dice)
- 3 tbsp fat free mayonnaise
- ½ lemon
- 1 avocado
- cilantro to garnish
- salt and pepper to season
- 1 oz finely chopped onion

Instructions:

Mix salmon, tomatoes, onion, and mayonnaise until they are combined well. Add lemon juice
Season with salt and pepper to taste

Plating:
Divide salmon mixture equally (drain juice). Spread mixture over the six tostadas. Place three tostadas on each plate. Decorate each with cilantro and avocado.
