SAFCOL® Gourmet Recipe for Spicy Tuna Japanese Salad
Tomato Salsa Tuna Fiesta Omelet

This recipe for delicious, hot, melty cheesy tuna enveloped in freshly cooked egg omelet is a family favorite.

Ingredients:

-2 Tbsp onion
-2 Tbsp red pepper
-4 Tbsp soy cheddar cheese
-1 SAFCOL® Gourmet on the go Chunk Light Tuna with Tomato Salsa
-1/4 cup soymilk
-3 eggs
-1 Tbsp vegetable oil

Instructions:

Preheat oven to 400° Fahrenheit. Sauté onions and red peppers. Beat eggs and mix with soymilk. Then whisk the mixture. Heat 8” pan over medium heat. Pour 1 Tbsp vegetable oil and egg mixture to pan. Cook mixture for one minute and flip over. Season with salt and pepper, if desired. Add SAFCOL® Gourmet on the go Chunk Light Tuna with Tomato Salsa and all other ingredients onto half of the omelet. Place pan in oven for 30 seconds. Take omelet out of oven and fold empty side over on top. Cut in half and serve.
