Ingredients:
- 1 SAFCOL® Gourmet on the go Chunk Light Tuna with Tomato Salsa
- ¼ red onion
- 1 Tbsp chopped cilantro
- 1 red pepper
- 1/2 jalapeño
- 1/2 Tbsp lemon juice
- 4 corn tortillas
- 1 can black beans
- 2 Tbsp soy cheddar cheese
- 4 whole eggs
- 2 Tbsp oil
- guacamole (optional)
Instructions:
Dice and sauté onion and red pepper. Chop cilantro, chop and de-seed jalapeño. Prepare ranchero mix by combining these items with lemon juice and soy cheddar cheese. Divide the mix into two portions. Place one portion on top of tortilla and cover with another tortilla. Pour 1 Tbsp of oil on a skillet and crisp the tortillas. Add SAFCOL® Gourmet on the go Chunk Light Tuna with Tomato Salsa onto tortilla. Using a nonstick pan, cook 2 eggs at once (sunny side up). Carefully place eggs on top of tortilla. Serve with a side of guacamole. |
