Lemon Pepper Salmon with Endive Frisee Salad

Accidentally discovered in Belgium, endive is rich in folate, Vitamin A, K and fiber. Combine it with SAFCOL® Chunk Salmon with Lemon and Pepper to create a dish that lets you enjoy a healthy salad.

Ingredients:

- 1 can SAFCOL® Gourmet on the Go Salmon with Lemon & Cracked Pepper in Spring Water
- 1 bunch frisee largely chopped
- 1 whole endive largely chopped
- 1 whole tomato medium dice
- 1 whole shallot finely dice
- 2 tbsp toasted pine nuts (optional)
- 2 tbsp parmesan cheese
- salad dressing of your choice

Instructions:
Mix frisee, endive, tomato and shallot with 2 tbsp of your choice dressing, add salt and pepper to taste. Place mixed salad in the center of the plate or bowl. Drain water from SAFCOL® Gourmet on the Go Salmon with Lemon & Cracked Pepper, and place on top of the mixed salad. Sprinkle toasted pine nuts and parmesan cheese on top of mixed salad.
