Lemon & Dill Salmon Rice Cake

Crunchy and delicious, this unique dish prepared with SAFCOL® Gourmet on the go Salmon with Lemon & Dill in Spring Water makes a great Hors d'œuvre to entertain guests. Perfect with our sweet dipping sauce made from scratch.

Ingredients:

- 1 pouch SAFCOL® Gourmet on the go Salmon with Lemon & Dill in Spring Water
- 1 cup basmati rice (or, substitute with short grain rice or instant rice)
- 1 tbsp extra virgin olive oil
- chopped parsley
- salt and pepper
- Panko
- sweet dipping sauce

Instructions:

Chop parsley and mix with SAFCOL® Gourmet on the go Salmon with Lemon & Dill in Spring Water, rice, and olive oil. Add a dash of salt and pepper. Divide rice mixture into 4 portions. Cover each with Panko. Place 1 tbsp of oil on a skillet and carefully place the cakes on the pan. Cook until cakes are golden brown (about 2 minutes) and flip to cook the other side. Turn off the heat, let the cakes cool for 1 minute on paper towels, and serve.
